Ala Carte: NBrew

Liquid nitrogen is nitrogen in a liquid state at an extremely low temperature. It is produced industrially by fractional distillation of liquid air. In simple terms,  Nitrogen is about 78% of the volume of the atmosphere and has a boiling temperature of one hundred and ninety five point eight degrees below zero Celsius - cold, very cold. NBrew is a new comer in the F&B market which is also termed as "Nitrogen Brew". NBrew uses liquid nitrogen to super freeze their gelato with no preservative, stabilizers or food coloring. With 31 base flavours of gelato to choose from, we spoke to the co-founders; Peter Tan and Colin Ong of NBrew on this new concept as they challenge the conventional method of making gelato.
